Yummy in My Tummy: Vegan Chocolate Avocado Mini Doughnuts with Chocolate Avocado Frosting

Seriously one of my favourite recipes that my family loves! It’s extremely moist and delicious (not to mention: HEALTHY), and I hope you enjoy it too!

Dry Ingredients:

  • 2 cups oat flour (basically old-fashioned oats blended to a fine powder)
  • 1 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 unsweetened cocoa powder
  • 1/4 cup coconut sugar
  • 1/4 cup (roughly) chopped dark chocolate (or chocolate chips)
  • 1/2 teaspoon salt

Wet Ingredients:

  • 2 medium avocados
  • 1/2 cup unsweetened almond milk with 1 teaspoon white vinegar
  • 1 1/2 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 tablespoon flax seed meal with 3 tablespoon water

Frosting:

  • 1/2 cup avocado
  • 2 tablespoons coconut sugar (or stevia)
  • 1 tablespoon unsweetened cocoa powder
  • 1/4 melted dark chocolate
  • 1/2 teaspoon salt

Cake Procedure:

  1. Sift and mix oat flour, baking powder, baking soda, cocoa powder, coconut sugar, and salt in a big bowl
  2. Mash avocados in another medium bowl (make sure there are not any lumps)
  3. Mix flax seed meal with water in a small dish and set aside
  4. Put white vinegar into a cup, top with unsweetened almond milk, and set aside
  5. Preheat the oven to 325 degrees fahrenheit or gas mark 3
  6. Add coconut oil, vanilla extract, almond extract, and flax seed mixture into mashed avocado — mix this well with a whisk or spatula
  7. Add the almond milk mixture into the wet ingredients and mix
  8. Combine all wet ingredients to dry ingredients
  9. Add and mix the roughly chopped dark chocolate (note: if the mixture looks a bit too dry, then add some more almond milk)
  10. Add mixture into preferred pan (I put mine in a non-stick mini doughnut pan)
    Depending on pan, bake it for 15-25 minutes (remember: it is very gooey and moist, so the toothpick used to prick the cake will not always come out dry)

Frosting Procedure:

  1. For the frosting, mash avocado until there are no lumps
  2. Add in the melted dark chocolate, sifted cocoa powder, coconut sugar, and salt
  3. Mix well and refrigerate until doughnuts are cooled
  4. Top off the doughnuts with the frosting and enjoy! Remember to refrigerate the leftovers!
