Carrot Cake Oatmeal

I have recently started to love eating oatmeal, and this is one of my favourites! It’s really simple, and that’s the thing I like about cooking with oatmeal — it’s so versatile. You can add anything you fancy (cacao nibs, fruit, berries, nuts, etc.) and it’ll taste amazing! I like my oatmeal more gooey and thick, but if you like yours more liquidy, then just add some water/almond milk!


  • 3/4 cup oats
  • 1/3 carrot grated
  • 1 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground culinary lavender (optional but tastes and smells so good)
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons chopped walnuts
  • 3 dried apricots diced
  • 3/4 cup almond milk (or whichever milk you’d prefer, or simply water!)
  • 1 tablespoon peanut/almond butter (optional)


  1. In a small bowl, add in and mix almond milk, vanilla extract, carrots, cinnamon, nutmeg, and lavender
  2. In a saucepan over low heat, add oats and the almond milk mixture
  3. Mix well then add walnuts and dried apricots
  4. After mixture thickens (or if you want it more watery, you can add more milk or water), turn off the gas stove and put oatmeal into a bowl
  5. If you want, top off with more nuts, stevia drops, cacao nibs, or fruit — but I put a tablespoon of peanut butter in mine

I love it so much; it honestly makes me so sad when I see the bottom of my bowl after finishing it — but at least my tummy is happy!
